This seared sea scallop dish with celery root puree and beet agnolotti creates a savory combination of flavors that utilizes ingredients that are in season.
Agnolotti is a type of pasta made with small pieces of flattened pasta dough, folded over a filling of roasted beets. And the celery root puree is a much healthier, yet still delicious, alternative to mashed potatoes.
This dish is finished with a citrus brown butter that has a refreshing taste of summer, created with blood oranges.
