This week's featured dish is the the mouth-watering Braised Short Rib.
The braised short rib is a thick cut of beef from the brisket area of a beef cow. Short ribs generally require long periods of time being cooked in order to break down the connective tissues in the meat. This process is done by a cooking method that uses both moist and dry heats known as braising.
Typically, when the short rib is braised, it is seared at a high temperature, then finished in a covered pot at a lower temperature, allowing it to soak in all the flavor. This process makes the meat seriously tender - fall apart on your plate tender.
The main part of the dish is cooked to perfection, but while it is the star player, there are a few supporting roles we have to mention.
The braised short rib is paired with whipped rutabaga, puffed quinoa, and miso butter for a harmonious taste.
The whipped rutabaga is a creamy, smoky heaven in a dish alternative to mashed potatoes, and still has a similar taste of that comfort food. The puffed quinoa is prepared using a process that utilizes baking and pan frying until the quinoa pops- similar to popcorn. Finally, the miso butter ties everything together with its creamy, salty, umami taste.
