We all love ridiculously good cooking, but we are often faced with a variety of dishes we would love to try and a harsh reality that we can't logistically get it all. Or can we?
Ordering multiple small plates at The Foundry with the intention to pass these dishes around makes for a wonderful dining experience. Getting a little bit of everything allows you to taste a variety of dishes you may otherwise pass up to make way for something you know you'll love. But every once in a while, a dish catches you off guard and may quickly become your new favorite. You just never know!
As for the Grilled Raddicchio, it won't leave you feeling blue (cheese). This warm salad makes the salad course intriguing again by offering up a mix of salty, savory, and sweet flavors.
So what makes it so good?
It is an elegant twist on the ubiquitous blue cheese-pear salad combination. Radicchio is a leafy vegetable, similar in shape and color to the traditional red cabbiage, but with a much more bitter flavor and softer texture. Grilling the radicchio removes the bitterness from the leafy green, helping it to better complement the rest of the dish.
With an mix of sweet apricot and pear vinaigrette, crisp and refreshing greens, and salty, pungent blue cheese this dish is already wonderful. But the most compelling part is the pancetta (that's BACON everyone!) to intensify the flavor and tie it all together.
